NO TOAST SWEET POTATO & FETA SALAD

50g 1/2 cup NOTOAST Granola Challenge
500g diced & peeled SWEET POTATO
250g diced or wedged raw BEETROOT
250g chopped CARROT
150g FETA cheese
Season with Salt & Pepper
280g Baby Spinach

METHOD;

Preheat your oven to 180 – 200C. Roast your PUMPKIN, BEETROOT & CARROT in a lined oven safe baking dish. Drizzle with oil, season with Salt & Pepper and roast for approx. 25mins turning occasionally. Set aside to cool. Place pumpkin, beetroot, carrot and spinach in a large bowl. Sprinkle with NO TOAST and crumble with Feta
then toss all ingredients to combine.
